Healthy + delish raspberry ripe bars
Who doesn’t love a sweet treat? This recipe and a cheeky take on the popular cherry ripe chocolate. It makes for a perfect healthy dessert alternative or mid-morning/afternoon snack that is not full of sugar and nasty preservatives and chemicals! You probably have most, if not all of the ingredients already in your kitchen too. It is super easy and requires no baking!
Recipe
Ingredients
1 cup of frozen raspberries
1/2 cup desiccated coconut
1 cup of rolled oats
2 tbs rice malt syrup (or other sweetener of your choice - honey, maple etc)
1 tsp vanilla essence
100 grams of dark chocolate (at least 80% cacao)
1 tsp coconut oil
Method
Put everything in a food processor* bar the dark chocolate and coconut oil and process in pulses until its combined but still quite chunky
Add and press the mixture down into to a slice or brownie pan lined with baking paper and place in the freezer to set for at least 2 hours
To melt the dark chocolate — Break the chocolate up in to chunks and add it to bowl along with the coconut oil. Sit the bowl over a pot of simmering water. Make sure there is not too much water in the pot, you don't want the bowl to touch the water in the pot or the chocolate might burn
Once the mixture is set, remove it from freezer and cut up into square chunks. Dip and coat the chunks in the melted chocolate, place on baking paper and pop it back in the freezer to set.

Notes
*You can use a blender but I find a food processor works better to keep the mixture a bit more on the chunky side
